Some Good Bakes


I love Jeanelle's choc. chip cookie recipe so I'm including it here:

1 cup butter, softened
1/2 cup shortening
1 1/4 cup sugar
1 1/4 cup brown sugar
2 eggs
1 tab vanilla extract

Mix above then stir in:
4 cups flour (I actually didn't fill the 4th cup all the way full - so a little less than 4 cups)
2 tsp baking soda
1 tsp salt

Mix well - will be a little crumbly (not as moist as like a toll house cookie.)

Stir in:
3 cups chocolate chips

Bake 12-15 minutes in 350 degree oven.

We are going to go deliver platefuls to people in the ward in awhile. I tried this new crockpot recipe today:

PEANUT BUTTER AND HOT FUDGE PUDDING CAKE

1/2 cup all-purpose flour
3/4 cup sugar, divided
3/4 teaspoon baking powder
1/3 cup milk
1 tablespoon vegetable oil
1/2 teaspoon vanilla
1/4 cup peanut butter (I think creamy would be best unless you really like peanuts)
3 tablespoons unsweetened cocoa powder
1 cup boiling water

In bowl, combine flour, 1/4 cup sugar and baking powder. Add milk, oil and vanilla; stir until smooth. Mix in peanut butter. Pour into Crockpot.

In same mixing bowl, stir together remaining 1/2 cup sugar and cocoa powder. Gradually stir in boiling water. Pour mixture over batter in crockpot and DO NOT STIR.

Cover and cook on high 2 to 3 hours (took just 2 in the smaller crockpot) or until toothpick inserted comes out clean. Serve warm with vanilla ice cream, hotfudge sauce, and nuts (we just ate it...it makes its own fudge sauce).


My favorite dessert crockpot recipe thus far is this:

HOT FUDGE CAKE
1 cup plus 3/4 cup packed brown sugar, divided
1 cup all-purpose flour
1/4 cup plus 3 tablespoons unsweetened cocoa powder, divided
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons margarine or butter, melted
1/2 teaspoon vanilla
1 3/4 cups boiling water

Mix 1 cup brown sugar, flour, 3 tablespoons cocoa, baking powder and salt together in mixing bowl. Stir in milk, margarine and vanilla. Spread over bottom of crockpot.

In another bowl, mix together remaining 3/4 cup brown sugar and remaining 1/4 cup cocoa. Sprinkle evening over mixture in crockpot. DO NOT STIR.

Pour in boiling water. DO NOT STIR. Cover and cook on High 2 to 3 hours until toothpick inserted comes out clean. Serve warm with ice cream or whipped topping if desired. First made February 4, 2007
