John spent $70 to bring his dad's old wheat grinder back with him on the plane from Guam in January. I've been making bread, but also found this good recipe for wheat pancakes:
3/4 cup whole wheat flour
3/4 cup all-purpose flour
2 T sugar
1/2 t ground cinnamon
1 T baking powder
1/2 t salt
1 1/4 to 1 1/2 cups milk
1 large egg
4 T unsalted butter, melted
1 1/2 t vanilla extract
1. Prepare pancake batter: Whisk flours, sugar, cinnamon, baking powder, and the salt in a medium bowl, set aside. Warm the milk until lukewarm (not hot). Whisk milk, butter, egg and the vanilla together until blended.
2. Make a well in the center of the flour mixture. Pour milk mixture into the well and stir with a fork (I used the whisk) until mixed and only small clumps of flour remain. Do not over mix batter.
3. Cook over medium heat on a griddle. Be sure to make yours look better than mine! ha!
