I wanted to have this recipe online so I can remember the recipe (it's from a Mormon cookbook). I really enjoy this recipe and it's quite easy to make:
Funeral Potatoes
1 32 ounce (about) bag of frozen shredded potatoes
2 (10 1/2 ounce) cans cream of chicken soup
2 cups sour cream
1 cup grated cheddar cheese
1/2 cup butter, melted
2 cups crushed corn flakes
2 tablespoons butter, melted
Combine soup concentrate, sour cream, cheese, the 1/2 cup melted butter and onions. Gently blend into potatoes. Put into a greased 9x13 inch baking dish. Combine crushed corn flakes and the 2 tablespoons melted butter. Sprinkle on top. Bake at 350 degrees F for 30 minutes. Makes 12 servings.
