GARDEN VEGETABLE SOUP (weight watchers)
1/2 cup sliced carrots
1/4 cup diced onions
2 minced garlic cloves
3 cups fat-free beef, chicken, or vegetable broth
1 cup diced green cabbage
1 cup chopped spinach
1 T tomato paste
1/2 t dried basil
1/4 t dried oregano
1/4 t salt
1 cup diced zucchini
Spray a large saucepan with nonstick cooking spray, heat. Saute' the carrots, onion, and garlic over low heat until softened, about 5 minutes. Add broth, cabbage, spinach, tomato paste, basil, oregano, and salt; bring to a boil. Reduce heat; simmer, covered, about 15 minutes. Stir in the zucchini and cook 3-4 minutes more. Serve hot.
saute'-ing the carrots, onions, and garlicadding in the broth, green cabbage (yep, I even did this -- I'm growing up!), spinach, tomato paste (silly me didn't quite read the directions and I added in 2 CANS of tomato paste instead of 2 T -- I was doubling/trippling the recipe...why cook a small portion when you can cook loads?! It still tasted great) and the spices.

voila - but I ate twice this amount...still zero points on weight watchers and I felt so healthy! haha By the way - I didn't measure the veggies...just added in lots and lots because I like a chunky soup. Let me know what you think! I mean, I went to the trouble to take all of these pictures and all. :)

I've gone "Paleo" so I think I will try this soup recipe! Sounds yummy, actually!!
